Kulfi: A Breakdown

Recipe Origin 😮‍💨 

Originating from the Indian subcontinent, kulfi holds a cherished place in the hearts of dessert lovers. The word ‘kulfi’ comes from the Persian ‘qulfi’ meaning “covered cup.” The frozen treat traces its roots back centuries, believed to have been created during the Mughal Era. The Mughal emperors, known for their love of extravagant feasts and rich delicacies, are credited with introducing kulfi to the royal courts after elaborating on the Persian concept to create the creamy, perfumed dessert that is now. Originally made by simmering milk for hours to achieve a thick, creamy consistency, kulfi was then flavored with aromatic spices, nuts, and fruits, creating a dessert fit for royalty.

Can you believe this? With no refrigeration available, royal chefs used a slurry of ice and salt to freeze the kulfi in conical containers placed inside matkas filled with ice.

Traditional Method of Kulfi Making

With time, the refreshingly creamy, cold dessert stole the hearts of Indians and continues to do so, having evolved into myriad, modern forms.

Recipe Breakdown 🧑‍🍳 

Ingredients (Malai Kulfi)

  • 2 cups whole milk

  • 1/2 cup condensed milk

  • 1/2 cup heavy cream

  • 1/4 cup sugar

  • 1/4 teaspoon cardamom powder

  • 2 tablespoons chopped pistachios (opt.)

  • 2 tablespoons chopped almonds (opt.)

Understanding the Process

Let's delve into the delightful journey of crafting malai kulfi, the creamy Indian frozen dessert that truly indulges the senses. It all starts with simmering whole milk in a sturdy pan over a medium flame, where it gradually transforms into a velvety potion through patience and occasional stirring. Once the milk has thickened and reduced to half its original volume, it's time to infuse it with sweetness. Pour in condensed milk and sprinkle in sugar, letting them mingle with the milk as it continues its gentle simmer. This is where the magic begins, as the flavors meld and deepen, creating a rich and decadent base.

Next comes the flavor infusion. Picture this: the aromatic fragrance of cardamom powder fills the kitchen as it's gently stirred into the thickened milk, adding a subtle yet distinctive note that elevates the entire concoction.
